An Italian sort; this oil has a brilliant light green colour and is characterised by a pronounced bitterness with slight shades of piquancy, fruity scent, taste of fresh grass, artichokes, mint, and rosemary. It perfectly combines with cream soups and minestrone containing various tuberous plants and miraculously enhances the taste of venison, beefsteak, rump steak, European lobster and spiny lobster and semi- matured cheese.
