Strict guidelines govern the production of Kulen, ensuring its authenticity and quality. Made exclusively from pork sourced from Slavonian pigs, particularly the prized black Slavonian pig and Mangulica breeds, which graze freely in the region’s forests, feasting on organic corn and barley. This natural diet imparts a unique flavour to the Kulen, setting it apart as a true delicacy. Hand-chopping the meat, rather than mincing, is believed to yield the best results.

Produced between November and March, Slavonian Kulen undergoes months of beechwood smoking before being carefully air-dried. Recognized for its exceptional quality, Croatian Baranja Kulen holds protected status, safeguarded by Geographical Indication (GI) and Protected Designation of Origin (PDO) certifications, attesting to its authenticity and regional significance.
