Slavonian kulen is by far the most famous delicacy not only in Slavonia but accross Croatia.This delicious regional cured sausage is made with pork cuts and divinely flavoured with red paprika and garlic.It has a rather piquant flavour and strong smoky aroma thanks to several months of smoking prior to air drying.
There are strict rules involved in the process of making Kulen.Kulen must be produced using meat of pigs that are raised in Slavonia,most commonly used breeds are black Slavonian pig and Mangulica.These pigs are raised free range, they roam the Slavonian forests and fed organic corn and barley which greatly affects the taste of Kulen and that’s what makes it so special.It is believed that the best results are achieved if meat is chopped by hand rather than minced.
Its produced between November and March and then smoked for several months over beechwood before being air dried.
Croatian Baranja Kulen is protected by Geographical Indication (GI) status from the Food and Agriculture Organisation of the United Nations.
